Rant: That time at Franklin Barbecue that made me ditch my offset

I was at Franklin in Austin last spring waiting 4 hours and watched a pitmaster catch a grease fire in an offset. He put it out in 30 seconds with a spray bottle. I went home and sold my offset that week - stick burners are just too risky for my backyard setup. Has anyone else switched from offsets after seeing a close call?

Whoa hold on now, I gotta push back a little. A spray bottle is like the most basic fire safety tool for any pit, not just an offset. I've seen grease fires on pellet grills and even gassers, it's just part of cooking fatty meats.

Hang on though, a spray bottle's kinda useless if the fire's already got a good hold on the grease. By the time you see flames licking up, a little squirt of water is just gonna make it flare up worse. You're better off just turning the airflow off and letting it choke out.

Spray that grease fire with water and you'll be doing your best impression of a dragon at the Renaissance fair. I'd rather flip the lid shut and let the thing suffocate than risk flaming bacon juice shooting across the yard. But hey, if you want to feel like a firefighter for a second, go for it.
