Pro tip: I wrote off the snake method as backyard gimmickry until a guy in Wichita showed me his 225 held for 7 hours
I figured charcoal baskets and a snake ring were just internet noise compared to my offset, then I watched him run a pork butt on one chimney of briquettes in a cheap kettle and it never once spiked past 240. Now I want to know how many of you actually run a water pan with it, because mine came out a little flat on the bark.
