My cousin's 'smoke ring' was just a Sharpie

He brought a brisket to the family reunion in Fresno last month and was bragging about the perfect ring. I cut into it and the color wiped right off on my finger. Anyone have a good rub recipe that actually penetrates?

Wait, he actually drew it on? That's next level sad. I'd be so mad if someone tried to pass off marker as bark, especially on a brisket. For a real ring, I go heavy on coarse black pepper and let it sit overnight. The salt and pepper actually get into the meat, no arts and crafts needed.

Seriously, that's just pathetic. I saw a guy at a cook-off once try to use coffee grounds mixed with oil to fake a bark, and you could smell the lie from ten feet away. Nothing beats letting the rub actually work into the meat overnight, like you said.
