My brother won't stop adding sauce to my ribs

I spent all night smoking these baby back ribs with my dry rub. He comes over and dumps bottled sauce on them before they're even done. It ruins the bark and makes the meat soggy. I've told him a hundred times but he just doesn't get it.

Seriously? He adds sauce before they're even done cooking? That completely ruins all the work you put into the dry rub and smoke. The bark is supposed to be crispy, not soggy from bottled sauce. I can't believe he keeps doing it after you told him. Maybe you need to just not let him near the grill next time.

My uncle in Memphis used to sauce ribs early and I thought it was a crime. Then I tried his method on cheap pork shoulder last summer. The sauce caramelizes into a sticky glaze over hours, and the meat underneath stays smoky. It's a different style, not wrong. Some folks just want that sweet crust right away.

You ever try to explain roofing to someone who just wants to slap tar on everything? Some people just have a way they do things and that's it.
