My brother-in-law from Texas told me to stop wrapping my ribs in foil after 3 hours. He said 'you're just steaming them at that point' and it finally clicked.

Wait... you were wrapping them for the whole cook? Like, the entire time? That's wild... I can't even imagine the texture.

My uncle in Texas swears by wrapping ribs after the first two hours, but he always unwraps them for the last thirty minutes to set the bark. @grant.kevin, I mean, keeping them wrapped the whole time sounds like they'd just steam and get mushy, like pot roast texture on a bone. Maybe that's the goal for some folks who want super fall-off-the-bone, but idk, you lose all the bite. It just seems like you're braising them at that point, not really barbecuing.

Yeah the unwrap at the end is key. I tried keeping them wrapped the whole time once, ended up with ribs that fell apart before I could even get them off the grate. Not my thing.
