Just realized my pitmaster uncle was right about resting brisket

Saw my uncle Randy at a family cookout in Kansas City last weekend and he watched me slice into a brisket 10 minutes off the smoker. He just shook his head and said 'you're ruining all that work, boy.' I finally tried his way - wrapped in butcher paper and rested in a cooler for 2 hours and the difference was night and day. Anyone else have a family member who just gets on your case about resting time?

Resting brisket for 10 minutes is for burgers, not that cut of meat.
