Just realized my brisket game changed after one critique from a KCBS judge

I was at a competition in Memphis last fall and a judge wrote 'bark is bitter, not savory' on my scorecard. Turns out I was using too much coffee in my rub after watching too many YouTube videos. Anyone else have a competition judge's comment totally flip how you cook something?

Yeah, the "got me too" part is real. I was honestly surprised how many people in that thread said the same thing happened to them. But here's what I'm wondering - were you just not paying attention, or did you actually think the coffee was fine until you looked closer? Because I'm still trying to figure out if I'm being paranoid or if that smell really is a warning sign. I mean, I caught it after a few sips and felt stupid for not noticing sooner, but now I'm second guessing myself. Did you go back and look at the batch after you realized, or just toss it and move on?
