Just realized my brisket bark was too dark because a guy at a Memphis comp said my fire was too hot
He told me, 'You're cooking at 275, not 225,' so I dropped my pit temp and the next one came out perfect. Anyone else get a simple tip that fixed a big problem?

My first pork butt was dry. Water pan fixed it.

Been there, @felix478. A water pan is a simple fix that makes a huge difference.

My first brisket came out like shoe leather before I tried a water pan, @pat540. After I put one in, the meat stayed moist and tender all the way through. Night and day difference for sure.
