I was dead wrong about using a pellet smoker for brisket, but after 3 cooks I'm a believer
Swapped my offset for a Camp Chef at a buddy's insistence and the bark turned out way better than I thought, has anyone else been surprised by a pellet setup?

Three briskets in and I'm starting to think pellet smokers are kind of like that slow cooker I was sure I'd never use, then it made the best pot roast of my life. It's funny how we get stuck on one way of doing things and forget sometimes the tool that seems too simple can surprise you. Life is full of those moments where you admit you were wrong and end up happier for it.

Oh man, totally get that with @miller.susan. I was a charcoal snob for years and then my buddy made a brisket on his Traeger that blew my mind. If you're getting that bark set right on the pellet smoker, try wrapping it in butcher paper instead of foil, it lets the meat breathe way better.
