I hit 1,000 briskets smoked this weekend and I'm not convinced it made me better
Everyone says you need experience to get good, but after that many briskets I still mess up the stall timing just as often as I did at 200. Has anyone else found that just doing something a bunch doesn't automatically make you a pro?

That's rough man, 1,000 briskets is a huge number. I mean, you'd think the law of averages would kick in by now, right?

Nah, I gotta disagree a little. Law of averages doesn't really work like that when you're cooking something with as many variables as a brisket. Each one is a different hunk of meat with its own fat content, thickness, and quirks in the smoker. Hitting 1,000 is more about learning to read each one individually than waiting for luck to balance out.
