Hot take: running two 18 lb briskets on one 22 inch kettle beats any $3k offset I've ever cooked on
Last Saturday I cooked two 18 lb packers side by side on my 22 inch kettle with a snake of Kingsford and a water pan, and both came off at 203 in right around 11 hours with bark I could not have beat on my buddy's big offset. Everyone at the comp in Waco kept telling me I was nuts for not upgrading, but the two briskets took 2nd and 5th out of 41 teams and cost me maybe $28 in fuel. Am I missing something, or are we all just buying smokers to look cool?
