Hot take: my brisket took 18 hours to cook because I trusted the temperature probe too much
The probe said 203 but it still felt like shoe leather, so I yanked it and let it rest anyway, and now I am wondering if anyone else has ignored their thermometer and just used the bend test to know when it's done?

The bend test saved me more than once honestly. That probe number is just a guideline but every piece of meat is different so you gotta feel it out. Last time I cooked a brisket my probe said 204 but the flat still wouldn't bend without cracking so I left it in another 2 hours and it came out perfect.

Why would you waste 2 more hours when the probe already tells you it's done? If you're at 204 and the meat still cracks, sounds like your thermometer is off or you're not letting it rest right. I've cooked dozens of briskets and never had to go past 203-205. The bend test is just a feel thing, but your probe is a tool that gives you actual numbers. If you can't trust your thermometer, get a better one. People overcomplicate this stuff and end up with dry meat because they keep cooking past the point of no return.
