First brisket that actually passed the bend test, took 3 tries

Been chasing this for 6 months on my 22 inch Weber in Tampa. Last Sunday I pulled a 14 pounder at 2 AM and it finally bent without tearing, jiggled like jelly. How long did it take you all to get a brisket you were actually proud of?

Wait, is the bend test really the thing to chase, or are we just convincing ourselves the meat is done? I still think the flat's moisture and flavor matter more than how it flops around, so maybe you got lucky with a fatty cut, not skill.

Bend test is the goal, but the 2 AM part is the real win. Took me about a year and a half, so you're ahead of me.
