Tried to make sourdough and ended up with a frisbee last Saturday

Honestly, I thought I had sourdough figured out after watching like 20 YouTube videos. Mixed my starter, waited 12 hours for it to double, but then I got distracted by a football game and left the dough proofing for 5 extra hours. When I baked it, the thing came out flat as a pancake and hard enough to chip a tooth. My wife said it looked like a homemade hockey puck. Anyone else ever ruin a loaf by forgetting about time?

Oh PLEASE. You left it to proof for SEVENTEEN hours total and expected a miracle? Sourdough is a DIVA that needs CONSTANT attention. You basically abandoned it during the most critical part. That's like walking away from a crying baby and wondering why it's mad.

Ha, you're not wrong. I once left my starter out overnight thinking it was "resting" and woke up to a science experiment gone wrong. Do you just camp out next to your bowl during the whole process?
