Wait, she just pointed at your pie crust and said that? At a county fair, in front of other people? That takes some nerve. I'm still stuck on the fact that a complete stranger could look at a pie and know the exact ratio issue just by looking. I've been making pies for 20 years and I can't even tell the difference by smell, let alone sight. That woman must have some kind of superpower or she's been burned by enough bad crusts to spot one from across a tent. Either way, I'm glad she said it because overworked dough is the saddest thing a baker can make.
