PSA: My sister said my sourdough was 'fine' and it made me rethink my whole starter routine
My sister came over for lunch two Sundays ago and I served her a loaf I was pretty proud of. She chewed for a second and said, 'It's fine, but the crumb is kind of tight, right?' I wanted to argue but she was not wrong. I had been feeding my starter once a day with tap water from the kitchen and rushing the bulk rise because of work. So I switched to filtered water and started feeding it twice a day for 5 days straight. The next bake had way bigger holes and a crust that actually crackled when it cooled. Has anyone else had a family member's offhand comment send them back to basics like that?
