So I've been baking chocolate chip cookies for years and always just guessed at the flour and butter. Last Saturday I was making a batch for a friend's birthday in my tiny kitchen in Austin and decided to actually weigh everything with a $12 scale I got off Amazon. I ended up with exactly 3 dozen cookies that all looked the same and didn't spread into one giant blob like usual.
