One comment about my sourdough starter changed everything I was doing wrong

I had been baking sourdough for about 8 months and kept getting dense, flat loaves that looked more like hockey pucks than bread. A lady at my local farmer's market in Eugene asked if I was feeding my starter at the same time every day and I said nah, just whenever I remembered. She told me that consistency is more important than anything else with starters, even the type of flour you use. I started feeding it every morning at 7am before work, same amount of water and flour each time. After just 10 days my starter was doubling in size in 4 hours instead of 8. My bread now has those big airy holes I see on Instagram and I don't even need to use the fancy organic flour anymore. Has anyone else had a simple timing change completely fix their sourdough problems?

Honestly this tracks with so many things in life, not just baking - showing up consistently at the same time beats trying to be perfect whenever you remember.

Forced myself to water my plants at the same time each week and now they actually live.
