My mother in law told me my pie crust was 'too tough' and I finally fixed it
She said it right at Thanksgiving dinner in front of everyone. Man that stung. I always just used my grandma's recipe which calls for ice cold water but I never actually measured it. Turned out I was adding way too much water. After she said that I started weighing my water on a kitchen scale and now my crust comes out flaky every single time. Has anyone else had a family member's blunt feedback actually improve their baking?

Measure your water by weight too now after the same thing happened with my biscuits.

Yeah 100% what tessa said about weighing everything. I switched to a kitchen scale after I ruined a batch of sugar cookies for my niece's bake sale. Turned out I was packing my flour cups like I was packing a suitcase lmao. Water weight is actually genius advice because I used to just eyeball it and my dough would come out either too sticky or like concrete. Now I weigh my water and flour and my biscuits actually rise the way they're supposed to.

My aunt once told me my chocolate chip cookies were dry and sandy in front of the whole family at a Christmas party. I was so mad I almost cried. But she was right. I was overmixing the dough and using too much flour. I started using a cookie scoop and measuring everything by weight instead of cups. Now they come out soft and chewy every time. Sometimes the harshest feedback is the most helpful even if it hurts at the moment.
