My butter wasn't soft enough for cookies and I learned a trick
Last Tuesday I tried to make chocolate chip cookies but the butter was still cold from the fridge. I ended up with flat, greasy pucks instead of fluffy cookies. Has anyone else had luck using the microwave on low power to soften butter without melting it?

Oh man, I gotta jump in here. Be real careful with the microwave method, because even on low power it can get tricky. I've had butter go from cold to a greasy puddle in like 10 seconds flat if I'm not watching it. The trick I've seen recommended is to cut the butter into small cubes and let them sit on the counter for 15-20 minutes instead. That way it softens evenly and you don't end up with hard spots or melted bits. Did you try the grating method where you shred frozen butter with a box grater?

Did you try freezing the butter and using a cheese grater instead?
