Just had my pie crust crumble apart completely when I tried to roll it out last night

I was making a double crust apple pie around 9pm and my dough just fell into pieces the second I touched it with the rolling pin. I had chilled it for an hour like the recipe said but it was way too dry and crumbly. Instead of tossing it I pressed it into the pan like a graham cracker crust and just did a lattice top with the other half. It actually baked up decent but looked like a total mess. Has anyone else salvaged a failed crust this way or am I just making more work for myself?

Roll it between two sheets of wax paper next time, that keeps it from sticking and falling apart on you. Works better than flouring the counter and you can just peel the top layer off.
