I thought letting my sourdough sit overnight was a waste of time
My neighbor in apartment 3B swore by it, but I only tried it after my third flat loaf. The difference in the crumb structure was actually insane, and now I'm a believer. Anyone have other 'too good to be true' baking tricks that actually work?

My friend's pie crust got way better after she started using vodka.

Wait, vodka in pie crust? That sounds like a weird kitchen hack. Does it really make that big of a difference compared to just using ice water? Feels like one of those things that might help a little but gets talked up way too much.
