Hot take: I chose sourdough starter over instant yeast and it was a mess for a week
I had to decide between keeping my 2 month old starter alive or just buying yeast packets for my weekend bread. Picked the starter because I felt guilty tossing it. Got up at 6am every day for 6 days to feed it and my kitchen looked like a flour bomb went off. The first loaf came out flat as a pancake, but the second one actually had those bubbles I wanted. Anyone else stick with a starter way longer than they should have?

Briannguyen, you're definitely not alone with the name thing. I called mine Fergus and talked to him like a little kitchen pet while feeding him. That moment when you open the fridge and find starter goo everywhere is a special kind of heartbreak. My second loaf saved me from tossing the whole thing, but I get why people just grab a packet of yeast and move on. Taking care of a starter is a real commitment, your mileage may vary.

Oh man, I feel that guilt! I had a starter named Steve that lived in my fridge for almost 8 months. I kept feeding it every Sunday even though I only baked like once a month. Then one day I forgot to put the lid on tight and it oozed out all over my fridge shelves. Had to throw the whole thing out and just bought a pack of yeast from the store. Did your starter have a name too or was I just weird about it?
