Chose boxed cornbread mix over scratch for Thanksgiving, and my aunt from Amarillo could tell in one bite
Had 22 people coming over and only 3 hours after work, so I grabbed two boxes of Jiffy instead of doing my usual scratch recipe with the buttermilk. My aunt from Amarillo took one bite, put her fork down, and asked what happened to my cornbread. The texture was fine but it tasted flat and sweet in a way that scratch never does. Now I keep a bag of cornmeal in the freezer for emergencies, but has anyone found a boxed mix that actually passes with picky family?
