Tuesday was the worst baking day I've had in 5 years
I woke up at 4am to get a jump on 6 dozen sourdough loaves for a local cafe order. First proofing went fine, but then my oven decided it hated me and dropped 50 degrees right when I loaded the first batch in. Lost 12 loaves to underbaked gummy interiors before I caught it. Took me until 3pm to get the temp stable again and finish the rest of the order. Has anyone else had an oven just give up mid bake like that?

Did you check if the thermostat probe was just dirty?

Lost 12 loaves to underbaked gummy interiors" man that hurts just reading it. @blaker75 might be onto something though, dirt on the probe will mess with temps like that.
