That one Tuesday where every batch of sourdough came out perfect
Had a rough Monday last week in my shop in Tulsa, three loaves collapsed and I was ready to toss everything. Then Tuesday hit and every single loaf came out with that perfect crackle and crumb... I even had a regular named Betty say it was the best she's had in 5 years. Has anyone else had those random perfect days that make you forget the bad ones?

Oh man, I read this thing online once about how sourdough has its own microbiome and it just kind of does its thing regardless of what we do (which is both terrifying and amazing). That Tuesday sounds like pure magic, especially after three collapsed loaves. I totally get that Betty moment, sometimes one person saying something nice makes all the difference when you're ready to give up. My own starter went through a phase where it just wouldn't cooperate no matter what I tried, then one day it just decided to be perfect and I still don't know what changed.

Maybe the starter knows when we're about to give up so it saves its best.
