Stopped by that old bakery on Maple Street yesterday
I was in my hometown and went to the place my grandma used to buy bread. They still have the same glass display case, but now all the croissants are filled with matcha or ube. The owner said they had to change things up about two years ago to keep people coming in. It made me wonder if anyone else has seen their local spots change their classic recipes like that.

My local diner replaced their classic cherry pie with a "deconstructed" version last year. It's just a bowl of filling with crumbled crust on top now. The waitress told me it photographs better for social media.

Kevin saying "photographs better for social media" is the part that gets me. Did the waitress roll her eyes when she said that, or was she actually trying to sell you on it? I'm curious if the owner sat down and actually decided the pie was more valuable as a photo op than as something people want to eat. Because you can get a bowl of cherry filling with crumbs on top from any chain restaurant these days, but a real slice of pie with a flaky crust takes actual skill. So was this a cost-cutting move dressed up as trendy, or did they really think people would prefer eating out of a bowl?
