Showerthought: a cup of flour is not 8 ounces, and my scale proved me wrong
I always scooped flour straight from the bag with a measuring cup. Figured a cup was a cup. Then I weighed one scoop on my kitchen scale out of curiosity and it came in at 5.6 ounces. Turns out the books all say a cup of all purpose flour should weigh 4.25 ounces, which means I was tossing in almost 30 percent extra flour on every single bake. That explains why my biscuits kept coming out like hockey pucks for two months straight. I pulled out the scale for a batch of chocolate chip cookies on Sunday and they finally spread out flat instead of sitting there like little dough balls. So now I weigh everything and my bench scraper is getting dusty. Do you all weigh your flour or is scooping still fine for you?
