Overheard a customer at my bakery say they'd drive across town for my sourdough
Honestly, I was just wiping down the counter yesterday and a lady told her friend she comes from the west side every Saturday for a specific loaf. Ngl, it hit different hearing it out loud like that. I've been tweaking that recipe for about eight months now, trying to get the crust just right. Has anyone else had a moment like that where you realized your work actually means something to people?

Getting the crust right is all about the bake time for me lol

Went through about four burnt batches before I figured out my oven runs hot. Really thought I could just wing it with the temperature but nope, my kitchen smelled like a campfire for a week. The real kicker was learning to trust my fingers over a timer since the recipe said 45 minutes but my oven does its own thing. Now I just set it and pray I don't end up with a hockey puck again.
