My grandmother's bread tip finally clicked after 20 years

She always said to let the dough rest 10 extra minutes before shaping, and I thought it was just old-school nonsense. Last Saturday in Minneapolis I tried it with a wet sourdough and the loaves finally stopped tearing on me. Anyone else have a relative's trick that took forever to appreciate?

...and honestly it took me until my third kid to figure out my mom was right about warming up eggs before baking. It never made sense to me as a kid, like why would the eggs care? But you leave them out on the counter for a bit and suddenly your cakes actually rise instead of looking like a pancake. I get it now. Old people had time to test that stuff on real food.
