My aunt told me to chill with the dough and she was right
My aunt watched me kneading a sourdough batch last Sunday and said I was 'fighting the dough'. She told me to let it rest 20 minutes before shaping. I ignored her for like 6 loaves and kept getting tough, flat bread. Finally tried her way and got the best oven spring I've ever had. Anyone else have a relative who bakes circles around you?

Whoa, six loaves is a lot but it is just bread though, @betty_fisher5. I mean, unless you're entering a baking competition, getting flat bread a few times isn't the end of the world. Folks act like a tough loaf is a personal tragedy, but it's still edible with butter or soup.

SIX loaves? Oh honey no. Your arms must have felt like rubber after the fifth one, I can't even imagine. My grandma caught me fighting some pizza dough once and she said 'you're not punching a clock, let it breathe'. She was dead right.
