I stopped dumping yeast straight into dry flour and my bread got way better
For years I would just toss my yeast in with the flour and hope for the best. Then about 6 months ago a baker in Omaha told me to bloom it in warm water with a pinch of sugar first for 5 minutes. Now I know my yeast is alive before I even start mixing. Has anyone else had a simple change like that fix their results?

@logan_schmidt your grandma probably used fresh yeast. Different beast. Tossing dry yeast into flour is fine if your kitchen is warm and your water's right. But blooming takes the guesswork out. 5 minute test saves you from wasting 3 cups of flour on dead yeast.

Really a game changer though? I've been tossing yeast in dry flour for like 15 years and my bread comes out fine. My grandmother never bloomed anything and her stuff was legendary. Feel like people overthink this stuff too much sometimes.
