Hit batch #500 this morning and realized something scary

I hit my 500th batch of sourdough this morning and that number surprised me way more than I expected. What got me is that I've been using the same starter since batch #12 and never once tested its pH until last week. Has anyone else gone years without checking their starter's acidity?

Huh, what made you check the pH after all that time?

Wait, didn't you say you were adjusting the pH for weeks before the fish started looking better though? It sounds like you might have caught the problem way earlier than you think, just didn't realize it until the hovering started. Sometimes it takes the fish showing obvious signs for us to connect the dots back to the water params.

You said "what made you check the pH after all that time" and honestly it's a good question. I was probably six months into having this tank, and I'd been messing with it daily for like three weeks straight because the fish were acting weird. One of them was just hovering near the filter like it was exhausted.
