Blew my mind learning yeast is alive and needs to be fed
I've been baking bread for 2 years but just read that yeast actually eats sugar and produces CO2 like a tiny little factory. Found it in a fermentation guide from a baker in Portland last week. Anybody else read something basic that made you rethink everything?

Makes sense but honestly this gets blown way out of proportion. Yeast is just a single celled organism doing what it does, same as bacteria in yogurt or mold on cheese. People act like it's some magical discovery but it's basic biology they taught in 7th grade. You ever think about how much we overcomplicate cooking by fixating on the science instead of just following the recipe and getting on with it? Bread has been baked for thousands of years without anyone knowing yeast was alive, so what really changed for you?

Yeah that's fair, I used to roll my eyes at the whole "science of sourdough" thing too but honestly, a little understanding helped me stop killing my starter. Makes it less about magic and more about just keeping the little guys fed, you know.
