Why are shops skipping the paint mixing step these days?

I was at a collision center in Portland last Tuesday watching them do a repaint on a '22 Honda Accord. The tech just grabbed a premix off the shelf and sprayed it on without checking the blend time or mixing it with fresh reducer first. Is that becoming the new normal or did I just catch someone cutting corners? Has anyone else seen places ditch the mixing bench altogether?
