I was boiling pasta wrong for years until my Italian neighbor in Rome pointed out my pot was way too small.

She saw me using a 2-quart pot for a pound of spaghetti and said, 'You need a big pot with lots of water so the pasta can move and cook evenly,' which made me wonder, what's the most basic cooking rule you learned embarrassingly late?

My grandma finally told me at 25 that you don't wash mushrooms.

Wait, you're supposed to wash them? Mine are always dirty from the store.

Nah, I actually leave a bit of dirt on mine, adds flavor.
