But how do you know the probe itself made the difference? Maybe the tree just needed more water in general, and you could have done the same thing with a soaker hose. I've seen plants bounce back just from a good soak during a dry spell. Could be you finally gave it what it was missing, not some magic from the tool.

The tree was looking rough for TWO YEARS before the probe showed me the soil was bone dry six inches down even after I watered. Did you ever actually measure moisture at root level with your soaker hose or just assume it was working?
