Slice of life is actually the hardest genre to write well, not the easiest.

The way the_lee put it, that slice of life is actually the hardest genre to write well, really clicked for me. It reminds me of how the most ordinary looking things in life take the most skill to pull off, like how a simple home cooked meal can be way harder to get right than some fancy restaurant dish. You don't have big dramatic story beats or loud action to hide behind, so every little scene and character moment has to earn its weight. Maybe that's why most slice of life shows feel forgettable, but the ones that really work feel like they're capturing something true about just being alive.
