Swapped out pre-shredded cheese for block cheese I grated myself in the air fryer and the texture difference was night and day

I made nachos in my air fryer last night using fresh shredded cheddar versus the bagged stuff I usually buy, and it melted so much smoother without that weird powdery coating - has anyone else noticed this or am I just late to the party?

Wait, are you telling me I've been eating powdery nachos this whole time for nothing? The anti caking stuff is basically cellulose or cornstarch, it ruins the whole texture. Fresh grated cheese melts into this beautiful stretchy blanket instead of that clumpy mess. I tried it once and never went back, the difference is honestly ridiculous. Even the flavor hits different, like brighter and sharper somehow. You're not late, you just leveled up your nacho game is all.

Pre-shredded has that anti caking stuff that messes up the melt every time. Fresh grate is the only way to go for crispy edges and gooey middle. Game changer for sure.
