Shoutout to the guy at the Asheville farmers market who called my zucchini method lazy
I was slicing zucchini into coins for the air fryer at 400 degrees for 15 minutes and they kept coming out soggy in the middle. This farmer watched me complain about it for 5 minutes and finally said to cut them into spears instead and salt them for 20 minutes first. Tried it that night and they came out crisp on the edges for the first time ever. Anyone else salting veggies before they hit the basket or am I late to this?
Saw a thing on a cooking channel about this last month and sort of blew it off, but now hearing it from a real farmer makes me think it's the move. Salting pulls the water out so they don't steam themselves in the basket, which is exactly why your coins were mush in the middle. I've been doing it with cucumbers forever but never thought to try it on zucchini. Cutting them thick like spears makes sense too, more surface area to get crispy. Guess I'm dragging the salt out tonight.
