PSA: My air fryer wings turned out way better after a stop in Memphis
I drove through Memphis last weekend and stopped at a little BBQ spot called The Rendezvous. I asked the guy at the counter how they get their wings so crispy, and he said it's all about drying them in the fridge overnight before cooking. I tried that same trick at home in my air fryer last night, left the wings uncovered in the fridge for 12 hours, and they came out perfect. Has anyone else tried pre-drying their meat before air frying?

Did you pat em dry with paper towels first too?

Yeah, I used to skip this step but it does make a real difference.

My sister tried that once and ended up with bacon bits stuck to her kitchen ceiling. Still not sure how that happened but she swears by patting them dry now. You ever have a cooking experiment go that wrong?
