My buddy's air fryer wings in Nashville changed my whole method

I was at a tailgate outside Nissan Stadium last fall and this guy pulled out the crispiest wings I've ever had from a little air fryer. Now I always toss mine in baking powder first like he showed me, anybody else found that makes a difference?

Man, that baking powder trick is a total game changer... I started doing it last summer after seeing some guy's video online and it really does make them way crispier without drying them out. I've even started adding a little bit of cornstarch to the mix sometimes, just a pinch, and it gives them this real nice crunchy skin. It's wild how something so simple changes the whole texture... I still mess up the timing sometimes though, they come out dark on one side if I don't shake the basket enough.

Baking powder is fine and all but people act like it's some kind of magic science. You ever just not overcrowd the basket and give them enough space to breathe? That does way more than any powder (and it's free). I tried the baking powder thing a few times and honestly couldn't tell the difference from my usual method of just patting them dry with paper towels and letting them sit in the fridge uncovered for an hour. The timing and temperature matter way more than whatever sprinkle you put on them. Not saying it doesn't work at all but we don't need to treat it like a secret family recipe or something.
