My brother said to always soak fries before air frying, but I tried it his way

He told me to cut russet potatoes, soak them in cold water for an hour, then pat them dry before adding oil. I did exactly that and put them in my air fryer at 400 degrees. They came out kind of soggy and not crispy at all, which was a letdown. I think maybe my kitchen in Phoenix is too humid for that method to work right. Has anyone else had fries turn out better without soaking them first?

The humidity in Phoenix is a real factor, but the soak itself is meant to pull out starch for crispiness. The key is drying them completely after. I pat mine dry, then spread them on a clean kitchen towel for another ten minutes. If any water is left, it steams in the air fryer and makes them soft. Getting them bone dry before the oil is the step that changed it for me.

Oh man, the soggy air fryer fry struggle is real! I had the same thing happen when I soaked them too. I skip the soak now, just dry the cut potatoes really well with a towel, toss them in a little oil, and they come out way crispier. That Phoenix humidity might be working against you for sure.
