Mom's old meatloaf recipe hit different in the air fryer

I was talking to my mom last week about how I always struggled to get her meatloaf right in the oven - it would either be dry or take forever. She said 'just try it in your air fryer at 350 for 25 minutes' and I laughed at first because I thought meatloaf was too big for it. Turns out she was right, it came out juicier and faster than I ever got in the conventional oven. Has anyone else successfully converted a family recipe that seemed too big for the air fryer?

lol I had the exact same thing happen with my grandma's stuffed peppers, thought there was no way they'd fit but they came out perfect in the air fryer. It's crazy how something so simple can make a family recipe actually taste the way you remember it. I'm glad your mom's meatloaf finally turned out right for you, that's such a win.

Is it really that deep though? It's just meatloaf.
