I gave up on frozen fries in my air fryer after a trip to Boise
For years, I just dumped a bag of frozen fries into the basket and set it for 15 minutes. They were always okay, but never great. Last month, I visited my sister in Boise, and she made fries from actual potatoes, soaking them in cold water first. I tried her method at home, and the difference is night and day. The homemade ones get so much crispier on the outside and stay fluffy inside. Does anyone have a good trick for getting the seasoning to stick without making them soggy?

Oh totally! I toss mine in a tiny bit of oil right before the seasoning, it sticks way better.

Actually, you want the oil mixed in WITH the seasoning. If you oil the pan first, the spices just sit on top of the oil and can burn. You mix the oil and spices into a paste, THEN you coat the meat. That's the trick for it to really stick and cook right.

... not gonna lie, I've been doing it wrong this whole time. The paste method actually makes sense though, keeps the seasoning from sliding off in the pan. I always just threw oil on the meat first and hoped for the best. Might have to try that mixing trick next time I grill. Gotta respect the science behind the crust.
