I finally got my mom to try air fryer chicken wings and her reaction was... something.
She took one bite, put it down, and said 'It's not crispy like the deep fryer at the diner' in my own kitchen last Sunday. Anyone have a foolproof method for extra-crispy skin that might win her over?

Tell her the diner's secret is probably a vat of old oil.

Yeah, old oil is definitely a thing. I just stopped going to the place near me that always smelled like it. Found a better spot that changes theirs regularly.

Oh man, I read somewhere that old oil can actually make the food absorb more grease. It just soaks it right up. No wonder it tastes so heavy sometimes.
