Hit 500 wings in my air fryer this year and the last batch finally came out right
I got my air fryer back in January and told myself I would actually use it instead of letting it sit on the counter like the bread machine. Last night I hit 500 wings made since then. I know that sounds like a lot but I do a batch almost every other night for me and my two roommates. The first hundred were rough, dry on the outside and weirdly rubbery in the middle. Around number 200 I figured out that patting them totally dry and tossing them in a tiny bit of baking powder before cooking made a huge difference. The trick that finally clicked was doing 380 for 12 minutes, flipping them, then 400 for 6 more. Last night's batch came out crispy enough that my roommate asked if I had ordered them from somewhere. I keep a little notebook where I write down the time and temp for each batch and it has honestly taught me more than any recipe I found online. Anyone else track their batches like this or am I the only weirdo with a wing journal?
